Ingredients:
- Broccoli ½ cup
- Onions 1/2
- Hummus 1 cup
- Pasta 1 cup
- Garlic cloves
- Green chili 1-2 pcs
- Salt
- Pepper
- Oregano
- Onion powder 1 table spoon
- Olive oil 2 tablespoons
- Unsweetened non-dairy milk
- Non-dairy cheddar cheese
- Parsley
Procedure:
In a saucepan, boil the pasta, then drain the water and keep aside to cool.
Meanwhile, heat oil in a pan and add chopped onions. When the onions turn transparent, add garlic cloves and stir after 2-3 minutes add broccoli. Add a pinch of salt and pepper. Cook for 4-5 mins with the lid closed.
Now, take out the fried onions and broccoli in a plate. You can use the same pan to make the hummus base. Add one table spoon of oil, add chopped green chili. And slowly add regular hummus with a spoon, add the milk so that it doesn’t stick to the pan and keep stirring.
Now add the pasta and the veggies and mix well. Garnish with parsley, cheddar cheese and oregano!
