Ingredients:
• Peeled Potato 1 large
• Oil 4 tablespoons
• Ginger chopped 1-inch pc
• Garlic chopped 4-5 cloves
• Cornflour 2 teaspoons
• Green Chili 1-2 pcs
• Soy Sauce
• Tomato ketchup
• Green Chilli Sauce
• Salt
• Pepper
• Roasted peanuts 1/4 cup
• Spring onion greens 2 stalks
Procedure:
Heat oil in a non-stick pan. Cut the potatoes in thin long slices (like fries) and add to the pan. Shallow fry till light golden. Drain on paper.
Slice spring onion bulbs, finely chop ginger and garlic. Mix soy sauce, tomato ketchup, green chili, corn flour and set aside.
Heat oil in the same pan. Add green chillies and sauté for ½ minute or till crisp. Add onion, ginger and garlic and sauté till soft. Add the sauce soy sauce mix (set aside earlier), salt, pepper and peanuts and mix.
Chop spring onion greens. Add corn flour mixture to the pan and cook till the sauce thickens. Add potatoes and mix gently. Serve immediately garnished with spring onion1
