Ingredients:
- 2 tablespoons olive oil or vegetable oil
- 2 shallots (or 1/2 white onion) sliced thinly
- 1/2 long red chilli (serrano), sliced
- 150 g / 5 oz cremini mushrooms, sliced
- 3 cloves of garlic, sliced
- 1 teaspoon sea salt
- Soya Sauce
- Chilli Sauce
- Tomato ketchup
Procedure:
Preheat a large frying pan over high heat first.
Add the olive/veg oil together with onions, stir in the garlic (you can chop or smash the garlic), add green or red chilli.
After 5 mins add the sliced mushrooms. You can add capsicum too if you like.
Cook the mushrooms over medium-high heat for 10 minutes, stirring a few times along the way.
After 10 minutes, add a mixture of the three sauces (soya, chilli and tomato ketchup)
Season with salt and pepper and cook everything for a further 3-4 minutes, stirring a couple of times. Keep the heat medium-high and if it looks like the mushrooms haven’t browned well, then increase the heat to high for a minute or two at the end.
Your spicy chilli mushrooms are ready to be devoured!
