Aloo paratha or flatbread stuffed with potato
Ingredients:
For the stuffing:
- 2 large potatoes
- 1/2 onion
- 1 tablespoon coriander leaves
- salt
- 1/2 teaspoon red chilli powder
- 1/2 teaspoon coriander and cumin powder
For the dough
- 1 cup wheat flour
- 1/2 cup water
Procedure:
- Prepare the filling by boiling the potatoes and mash them in a large bowl.
- Take a pan and heat 1 teaspoon oil
- Add chopped onions, cumin and coriander powder and red chilli powder, stir till fried in low heat.
- Add the mashed potatoes and mix with the fired onions. Make sure no lumps remain.
- Sprinkle in some salt and coriander leaves.
- Turn off the heat once the potato stuffing is light brown.
For the paratha or flatbread:
- Knead a soft dough by mixing the wheat flour and water in a large bowl.
- Add water gradually and knead into a soft dough.
- Make small-medium balls of the dough and roll them out into 3 to 4-inch circles.
- Add a spoonful of potato filling in the centre.
- Gradually press the rolling pin on all sides while making the parathas or the flatbread.
- Be very careful to apply pressure evenly so the filling doesn’t come out.
Now pan fry the Aloo Paratha by heating a flat pan and roasting the parathas/ flatbread, cook them on both the sides with a spoonful of oil. Serve hot with pickle or sauce!
